Nothing pleases me more than trying a new vegetable and LOVING it! I have been dicing, slicing, and spiraling Jicama in everything from salad to gumbo. Here is a fresh take on Thai cucumber salad. Remember to add a healthy protein like edamame, garbanzo, or lean chicken breast to make it complete.
Spiralize cucumbers and carrot
Julianne jicama into thin matchstick slices
Combine in a bowl: rice wine vinegar, sweet Thai chili sauce, sesame oil, sesame seeds
Add vegetables to the bowl mixture and coat thoroughly
Chill for 1 hour
Serve garnished with flat leaf parsley
